Alain Ducasse Chocolate Paris was created by French chef Alain Ducasse and opened its Tokyo Koubou in Nihombashi in 2018. The workshop handles the process from cacao bean roasting to chocolate production, using beans selected from origins around the world.
For the autumn menu, Cabosse Chocolat combines Madagascar 75% cacao cream, dark chocolate mousse, caramel, and chocolate biscuit in a geometric cacao-pod design. Sable Marron Myrtille pairs matcha-flavored sable, chestnut mousse, blueberry confit, and Madagascar chocolate ice cream.
Fondant Caramel Coco uses 75% original-blend dark chocolate, roasted coconut, and caramel mousse. The dessert may be gently warmed after slicing to bring out its cacao aroma and soft texture. The Tokyo Koubou also includes the Le Salon dessert space, where chocolate desserts and drinks can be enjoyed in the workshop setting.
