Mita Seimenjo is known for generous noodle portions and carefully prepared thick noodles. Its noodles are made with a blend of wheat flours, with the water ratio adjusted according to the day’s temperature and humidity. Cooking time is also adjusted to the condition of the noodles before they are chilled in cold water, helping preserve their springy texture and smooth finish.
