quinto began in a residential part of Nakameguro in May 2023, offering an innovative fusion style based on combining two ingredients and drawing out the character of each. At the Ginza restaurant, charcoal adds aroma, lingering flavor, and intensity to the cooking, giving the established style a deeper and more defined finish.


The restaurant is led by Ryo Watanabe, who trained for about three years at restaurants in Japan before working at six Michelin-starred restaurants in France, the United Kingdom, and Denmark. After returning to Japan, he worked at two-Michelin-starred MAZ and later served as sous-chef at esprit C. KEI GINZA, supervised by chef Kei Kobayashi.
