Chef Shusaku Toba has teamed up with BRISK STAND for a collaboration menu featuring the burger chain’s signature Kitta Yatsu in Tokyo and across Japan.
The collaboration runs at all BRISK STAND locations from November 5 through November 30, 2026. The menu is available while supplies last, and individual store hours should be checked before visiting.
The Kitta Yatsu is served with two sauces created by Toba: a rich homemade BBQ sauce and a mildly spicy chili mayo sauce. The price has not yet been announced.
About the BRISK STAND Collaboration
Kitta Yatsu is made by cutting a completed burger in half and grilling the cut surfaces again on a hot plate. The juices from the 100% domestic-beef patty soak into the buns, creating a crisp exterior, a juicy center, and a more intense roasted aroma.

The collaboration is the second stage of the relationship between Toba and BRISK STAND. Their earlier exchange centered on cutting a burger in half and grilling the exposed surfaces again, a technique that was later used for a burger served at sio AOYAMA in July 2026.
BRISK STAND is based in Kobe and is known for burgers inspired by Japanese flavors. Its signature preparation emphasizes the contrast between crisp, freshly grilled surfaces and the rich juices absorbed by the bun. The Kitta Yatsu has also helped establish the brand as a distinctive gourmet burger shop.
For this release, the sauces are designed to change the character of the same burger rather than replace its core flavor. The BBQ sauce adds deep sweetness and smoky richness, while the chili mayo brings creamy texture and a lingering kick. Customers can begin with the burger plain before trying both sauces.
