Sushiro has launched a limited edition collaboration menu with TV Yamaguchi’s evening program “mix,” featuring sushi inspired by the famous Kintaikyo Bridge and local fugu (pufferfish) in Yamaguchi Prefecture.
The special sushi will be available starting September 2, 2026, at Sushiro locations throughout Yamaguchi Prefecture. Please check the sales period and prices before visiting, as detailed in the facts table below.
The collaboration includes two sushi items: the “Kintaikyo-style Roll” priced at ¥480 and the “Fugu and Seared Shirako Wrapped with Ponzu Jelly” starting at ¥280. Both items are offered in limited quantities and are exclusive to Sushiro stores in Yamaguchi.
About the Collaboration
This unique partnership celebrates Yamaguchi’s iconic Kintaikyo Bridge and the local specialty fugu. The “Kintaikyo-style Roll” was created by TV announcer Mizuki Morimoto, a devoted Sushiro fan, who incorporated mixed sushi rice with takuan and other fillings, topped with shiso leaves, kinshi tamago, cucumber, shrimp, salmon, kohada, simmered anago, and sparkling ikura. The roll is carefully prepared with techniques like in-house vinegar marinating for extra flavor. A special pick featuring Morimoto accompanies the roll.
The “Fugu and Seared Shirako Wrapped with Ponzu Jelly” highlights seared true fugu skin for a smoky aroma combined with soy sauce-seared tiger fugu shirako, served with a refreshing ponzu jelly. This dish is not available for takeout and may not be offered at all locations.
