Created by sushi chef Ryohei Sato, who brings experience from Hawaii and Tokyo’s renowned Ginza Onodera, this dish reflects his culinary journey. It features classic Edomae sushi ingredients such as anago (conger eel), kuruma ebi (prawn), kohada (gizzard shad), tamagoyaki (sweet omelet), kanpyo (dried gourd strips), and cucumber. The dish is enhanced with aromatic sesame oil, subtly infusing Hawaiian poke flavors into the traditional sushi bowl.

Served exclusively at the Nadaman sushi counter, the set includes a side of boiled greens, salad, red miso soup, and chirashi sushi. Guests who reserve in advance can also enjoy complimentary nigiri sushi featuring medium fatty tuna and lean tuna.
