Nina at The Ritz-Carlton, Tokyo is introducing an autumn pastry collection from October 1, 2026, with seasonal ingredients such as apples, chestnuts, matcha, soba, and mandarin.
The pastries will be released in stages at the patisserie on the hotel’s first floor in Tokyo Midtown, Roppongi. Nina is open from 11 a.m. to 8 p.m., with last orders at 7 p.m.; the collection includes items for dine-in and takeaway, as well as whole cakes.
Prices start at ¥1,500, including the Soba and Lemon Bavarois and the Spice and Orange Flower Cake. Other choices include the Japanese Whisky and Matcha Baba at ¥1,800 in the patisserie, the Mandarin Flower Cake at ¥1,600, and the plated Autumn Sunlight dessert at ¥2,000.
About Nina at The Ritz-Carlton, Tokyo

Created by pastry chef Nina Métayer, the collection combines French pastry techniques with Japanese ingredients and seasonal imagery. The Japanese Whisky and Matcha Baba uses matcha pastry soaked in syrup made with the hotel’s original-label Japanese whisky, then layers in custard, lemon confit, and light matcha cream. The Soba and Lemon Bavarois uses soba in its biscuit, crisp layer, praline, and bavarois for a deep roasted flavor.
