This autumn high tea celebrates the rich flavors of chestnuts in many forms, including sweet chestnuts, chestnut paste, and chestnuts simmered in their skins. The menu offers a variety of savory and sweet dishes that highlight seasonal fruits and vegetables alongside chestnuts.
The appetizer tier features herb-marinated sea bream with sweet chestnuts and figs, as well as dishes combining chestnut paste, pumpkin, and red shrimp on rustic bread with lime. The fish course is an oven-baked cutlassfish with autumn eggplant, decorated with a chestnut and nut mousse resembling Mont Blanc, served with a dry vermouth cream sauce.
The main dish is a Viennese-style domestic beef fillet topped with cheese-infused breadcrumbs, accompanied by roasted autumn vegetables and a red wine sauce with chestnuts and mushrooms.
