The summer menu at Aman Kyoto reflects a deep connection to Kyoto’s nature and the resort’s forest garden. The lunch courses come in two options: a five-course Chef’s Recommendation priced at ¥15,000 and a seven-course Tasting Menu at ¥18,000. Both feature seasonal ingredients like charcoal-grilled pike conger eel served with low-temperature cooked Kamo eggplant and a consommé soup that captures the essence of the eel. Another highlight is the charcoal-grilled butterfish paired with a rich fermented butter and tomato sauce. The main course includes Kyoto venison loin grilled over firewood, served with a pepper sauce made using sansho pepper harvested on the Aman Kyoto grounds. The meal concludes with a refreshing dessert of juicy peaches and rice pudding made with goat milk from the Rurikei Yagi Farm.
The dinner course offers eight exquisite dishes for ¥24,000. It begins with marinated horse mackerel paired with fermented watermelon and cucumber, followed by ravioli stuffed with fried eggplant and ricotta cheese, served with a consommé made from steamed Kamigamo tomatoes. The fish course features grilled tilefish with a Manganji pepper sauce, capturing Kyoto’s summer flavors. The main dish is sustainably sourced wagyu beef grilled over firewood, accompanied by herbs picked from the Aman Kyoto gardens and wrapped with chimaki rice dumplings.
