Kairikiya, headquartered in Kitashirakawa, Kyoto, was founded in 2005 and now has 141 stores nationwide. The signature product, “Special Soy Sauce Ramen,” is characterized by its light yet rich and deep flavor.
Even though it has grown into a large chain with over 100 stores, I still quite like it.
The Special Soy Sauce Ramen features an aromatic matured soy sauce blend made from several types of soy sauce, a superb soup using carefully selected chicken bones and high-quality back fat, firm straight thin noodles, and thinly sliced special char siu that has been slowly simmered in the matured soy sauce blend. The taste is simple yet rich and deep, offering a nostalgic flavor that you won’t get tired of even if you eat it every day.

The main store in Kitashirakawa, Kyoto, is located just north of the Tenkaippin headquarters. While the taste is the same nationwide, visiting the main store at least once is highly recommended. Look for the white sign with red lettering.
