About the PISOLA November craft pasta

Kujo negi pesto

PISOLA makes the pasta sauce by browning Kujo negi with fermented butter and capers, then blending in fresh negi. The dish costs ¥1,978 including tax at the regular price.

The flavor of this pasta is defined by an in-house Genovese sauce made with Kujo negi. We sauté the rich, sweet Kujo negi with cultured butter and capers to draw out its umami, browning it for depth, then finish by folding in raw Kujo negi to create a paste that balances deep warmth with the fresh aroma of the greens. When paired with a clam-based sauce, the seafood umami layers and enhances the oyster notes.

Chicken-stock espuma

The oyster and Kujo negi pasta is topped with a light chicken-stock espuma, adding a smooth, airy layer to the seafood-focused dish. The all-you-can-eat price is ¥988 including tax.

An espuma made from carefully selected chicken dashi sits atop the pasta. Espuma is a technique that turns liquids into a fine foam. The chicken dashi is seasoned to pair with the Kujo negi Genovese, yielding a light, airy mouthfeel. The aroma of Kujo negi and the seafood savoriness spread through the pasta, while the gentle richness of the chicken dashi adds depth.

Anchovy and browned onion oil

PISOLA finishes the pasta with browned white onion, garlic, and anchovy oil. Guests can mix it in as they eat to add roasted depth to the ¥1,978 including tax pasta.

A signature burnt oil made with anchovy and negi provides the dish's accent. Sliced white negi are slowly sautéed in oil, then garlic and anchovy oil are added to finish with a toasty aroma. The combination of Kujo negi Genovese and oysters gains even more depth from the burnt negi aroma and the anchovy's richness, inviting you to savor the evolving flavors on the plate at your own pace.

The chicken-stock espuma is made by turning a seasoned liquid into fine, airy bubbles. Its soft texture adds a mellow layer to the seafood and green-onion flavors without making the pasta feel as heavy as a traditional cream sauce. The browned oil provides a stronger roasted note when added during the meal.

PISOLA describes the menu as a different approach to oyster pasta, using Kujo negi as the central sauce ingredient rather than treating it only as a garnish. The company lists capital of ¥30,000,000 for PISOLA’s operating company. The dish is a seasonal release and may end early if ingredients run out.
