About Shoya’s Seasonal Menu
Shoya’s chefs have crafted nine dishes that showcase the best of summer’s bounty. The menu features Isaki sashimi, a fish rich in flavor and protein that supports recovery from fatigue. It also includes a popular grilled eel skewer assortment combining savory kabayaki and slightly bitter liver skewers, perfect for stamina. Seasonal vegetables like bitter melon and gyouja-na (a nutritious green combining wild garlic and chives) are served in flavorful preparations such as stir-fry and ohitashi (lightly boiled and marinated). The menu is rounded out with other summer favorites like grilled ayu fish, fresh edamame, and corn tempura.
