Shinjuku Saboten is a tonkatsu specialty restaurant brand founded in 1966 and now operating about 480 locations in Japan and overseas. Its first store, Shinjuku Saboten Odakyu Ace South Building, remains in operation at its original Shinjuku location.
The restaurant is known for dishes such as Filet Brian, a rare cut with only two servings taken from each animal, and aged loin cutlet. Its tonkatsu is prepared with special fresh breadcrumbs and 100% vegetable oil, then cooked slowly at a low temperature to bring out the ingredients’ flavor.
The restaurant’s official character, Katsumon, is described as a tonkatsu fairy wearing a coating said to contain love, courage, and hope. The character appears alongside the Shinjuku Saboten logo in the new UTme! designs, giving the bags and T-shirts a clear connection to the restaurant brand.
The nearby Shinjuku Saboten Odakyu Ace South Building store is open from 11:00 a.m. to 10:00 p.m., with last orders at 9:30 p.m. Visitors can combine a look at the restaurant’s original Shinjuku location with the collaboration’s exclusive sales location at the UNIQLO store.
