About the Seasonal Chicken Shio Ramen

Bannai Shokudo, the Original Restaurant
Kitakata Ramen Bannai traces its roots to Bannai Shokudo in Kitakata, Fukushima. The long-established restaurant is the starting point for the chain’s regional ramen tradition.

Kitakata Ramen Tradition
Kitakata ramen is known as one of Japan’s three major regional ramen styles. The seasonal Tanrei Chicken Shio Ramen is priced from ¥990 (tax included), with larger and premium versions also available.
The new ramen is built around a golden broth made by slowly simmering whole domestic chickens to draw out their natural flavor. Domestic chicken breast chashu, shredded scallions, bok choy, bamboo shoots, yuzu, and chicken oil add layers of aroma and richness while keeping the overall taste clean and easy to enjoy. The dish comes with Bannai’s curly, flat-cut, fermented high-hydration noodles, with thin noodles recommended for tasting more of the broth; thick noodles can also be selected.
