About Rurubu Kitchen and the Collaboration

Rurubu Kitchen is a unique dining spot operated by JTB Publishing, bringing authentic regional Japanese flavors discovered by the editors of the travel magazine “Rurubu” to Tokyo diners. This collaboration highlights the culinary culture of Niijima and Shikine Islands, located about 160 km south of central Tokyo in the Izu archipelago. The islands are known for their white sandy beaches and distinctive landscapes formed by local white stone called Kogaishi.
One local specialty is “tataki,” a traditional dish made from freshly minced blue muroaji fish blended with miso and ginger. For this collaboration, the fish paste is combined with miso-marinated cheese and wrapped in spring rolls. The dish is served with a side of namul made from ashitaba, a vegetable unique to the islands. Guests can choose between two types of island shochu: the rich and mellow “Jinata” made from rare American sweet potatoes aged three years, or the light and refreshing “Habushiura,” inspired by the scenic Habushiura Beach.
