The hotel’s Chinese restaurant, Hoshigaoka, is known for its traditional Chinese cuisine with a modern twist. This year, they have refreshed their popular summer cold noodle lineup. Replacing last year’s “Gomoku Cold Noodles,” the new “Seafood and Summer Vegetable Cold Soba with Sesame Sauce” features luxurious ingredients such as shrimp, squid, salmon roe, and jellyfish, combined with vibrant Kyoto summer vegetables like Kamo eggplant, okra, tomato, and corn. The dish offers a harmonious blend of seafood umami and the freshness of seasonal vegetables, all enhanced by a fragrant sesame sauce.

Also new this year is the “Steamed Chicken and Avocado Cold Jade Soba with Sansho Pepper Aroma.” This original creation by Hoshigaoka’s chef combines tender steamed chicken and rich avocado, accented with a specially made sauce flavored with fresh sansho pepper that adds a refreshing aroma and a pleasant tingling sensation. Garnished with colorful herbs and vegetables such as shiso, chervil, endive, and yellow chicory, this dish is both visually stunning and light enough to enjoy even during the hottest summer days.
