Sushiro is releasing a limited-edition Katsuobushi Soy Sauce Ramen supervised by Menya Shirakawa, a beloved ramen shop from Gifu’s Hida Takayama, available across Japan.

This special ramen often sells out quickly, especially on weekends, so timing your visit is important if you want to try it.

The ramen is priced from ¥480 (tax included) and will be sold nationwide at Sushiro locations from August 19 to August 30, 2026, or until the total of 270,000 servings is sold out.

Menya Shirakawa is a popular ramen shop in Gifu’s Hida Takayama, known for attracting both local fans and tourists with its long lines. Their signature broth is carefully simmered for 10 hours using seafood, chicken bones, and vegetables, resulting in a rich soy sauce soup with a mellow depth enhanced by katsuobushi (dried bonito flakes). The ramen served at Sushiro features this distinctive broth topped with shredded katsuobushi to deliver a lasting umami flavor.
