The new udon starts with dashi made from bonito and kelp, enriched with smooth sesame paste and chili oil. Nakau’s chewy udon is topped with shredded green onion and a mala sauce flavored with cumin, star anise and Sichuan pepper among seven spices. The separate ¥30 (tax included) sauce can be added for a stronger tingling heat and deeper flavor.
