Kitto Yuzu from Golden Village

The Kitto Yuzu and Cream Cheese Rye uses aromatic Kitto yuzu from Golden Village in Tokushima. The seasonal rye bread is priced at ¥380 (tax included) and combines yuzu peel with cream cheese, cinnamon apple, and roasted walnuts.

In Naka Town, Naka Prefecture, the 'Golden Village' is involved in cultivating 'Kito Yuzu.' Its high aroma and strong acidity are unique features of 'Kito Yuzu.' The reason for its superior aroma is that it grows in mountains at an altitude of 300-500 meters. Additionally, the significant temperature differences throughout the year and other conditions produce 'Kito Yuzu' with a high aroma, thick skin, and strong acidity.

Baguette Rabbit is known for its high-hydration Boule, made with a water ratio of more than 90% compared with around 65% for typical bread dough. The result is a moist, chewy texture that highlights the flavor of the wheat and provides a foundation for both sweet and savory seasonal combinations.
